Here what I'm using in my script:
CC=${CLFS_TARGET}-gcc ./configure \
  --prefix=/ \
  --target=${CLFS_TARGET}
CC=${CLFS_TARGET}-gcc make
DESTDIR=${CLFS}/cross-tools/${CLFS_TARGET} make install
