You choose the target book for your final build.

If you want a 32bit user space, use the x86 book.
If you want a Pure 64 Bit system with all 64 bit user space, use the Pure
64-Bit book.
If you want a multilib system with 32 bit libraries and 64 bit user space,
use the Multilib book for x86_64.
